Mini Kiss Pies

Whew! What a week. We have been running running running and have had the best Christmas ever. Anna had so much fun this year, and has been spoiled like crazy. She’s pretty convinced right now that she owns the world and all who care to walk the earth should hang on every babble, word, smile, and dimple. Below are a few highlights of the weekend….

So before all the madness of the holiday started, I threw together these little kiss pies. I saw them on the Picky Palate and knew I had to give them a try. They are perfect for the occasion when you want to do something a little different but just really don’t have the time. This requires no mixing bowls, no spatulas, no measuring…none of that nonsense. Just some pie crust (I was in a crunch so I used a store bought pie crust) and some hershey kisses (I used the mint truffles because….I like them….).

This is so seriously simple. Roll out the pie crust. Like literally, unroll it. No rolling pin required if you take the lazy route like me and buy your crust already made. Then cut circles out, I found the rim of a wine glass to make the perfect size circle.

Place your kiss in the center of the circle and fold up the edges, give it a little pinch to seal it shut (whoa! Almost made a type there!)

Then sneak a hershey kiss for yourself…….do it, you know you want to…..just one……or you know……….fifty…..

Then place your mini pies on a cookie sheet, and brush with a light egg wash

Sprinkle with granulated sugar. I used colored sugar….to be festive…

Bake them until they are golden. Eat them. All. Right now. Then you don’t have to share!!
